Snacks are something we go through like water in my house. So I need quick and healthy snack options for my kids and me, especially for the evening runs to the different after-school activities. These energy balls are easy to make. Most of all, they satisfy the post-lunch sweet cravings for sure.
Makes: 8-16 pieces
Ingredients:
2C chopped dates
1C almond powder
1 tsp coconut oil
1/2C coconut flakes(unsweetened)
1/4C coconut flakes(to roll in)
Preparation:
To a blender, add almond powder, dates and give it a good mix.
Add coconut oil, and coconut flakes to the date mixture and blend well.
Scoop into a tablespoon and roll into balls.
Roll in coconut flakes and serve.
