Snacks are something we go through like water in my house. So I need quick and healthy snack options for my kids and me, especially for the evening runs to the different after-school activities. These energy balls are easy to make. Most of all, they satisfy the post-lunch sweet cravings for sure.



Makes: 8-16 pieces

Ingredients:

  • 2C chopped dates

  • 1C almond powder

  • 1 tsp coconut oil

  • 1/2C coconut flakes(unsweetened)

  • 1/4C coconut flakes(to roll in)


Preparation:

  1. To a blender, add almond powder, dates and give it a good mix.

  2. Add coconut oil, and coconut flakes to the date mixture and blend  well.

  3. Scoop into a tablespoon and roll into balls.

  4. Roll in coconut flakes and serve.
